A sommelier (sah-mal-yAy), is essentially an expert of wine. Sommeliers are employed by restaurants to manage their wine programs-to taste and select bottles and vintages for the wine list, to determine which wines will pair best with the kitchen's cuisine, and to teach the wait staff about the restaurant's wine selection. Expert sommeliers are well-versed in all aspects of wine production, storage, presentation, tasting, and pairing, and often have extensive knowledge about production areas, winemakers, and particular vintages. Not every restaurant employs a sommelier, but ones that do often do so for the benefit of their guests: a conversation with a sommelier allows a guest to seek recommendations, ask questions, or request advice based on their own expectations, budgets, and taste preferences.
